When times were not yet so plentiful and there were no stores selling freshly flown-in mangoes from Peru or avocados with the label “I’m ripe” from Chile, it has always been customary for us in the mountains to have a pantry, a so-called “Speiss”, in the house.
This was usually stored in the cellar to keep supplies such as bacon, butter, flour, vegetables etc. cool and thus preserve them for longer.
In those days, people knew how to make a lot out of a little. And to prepare delicious meals from every conceivable treasure of nature. Whether it was a hearty bacon dumpling or semolina dumpling soup, cheese dumplings, doughnuts, pancakes, Kaiserschmarrn, potatoes with curd cheese. Or freshly baked bread with butter and watercress.
Our hearts are still attached to all these recipes today. And it is a pleasure for us, especially in today’s fast-paced, stressful times, to take time out every now and then to go out into nature and collect herbs. To then process them according to grandma’s recipes.

Our recipe:
For the sourdough:
300 g plain flour (700)
300 g cold water
5 g dry yeast
For the bread dough:
1.2 kg plain flour (700)
30 g salt
15 g dry yeast
150 g olive oil
630 ml water
300 g green olives, pitted
20 g sugar
5 g dried basil
100 g flour for dusting
Preparation:
- Prepare the sourdough one day in advance. Mix all the ingredients together
- Cover and leave to rest in the fridge.
- Mix the finished sourdough and the ingredients for the bread dough with a mixer.
- Knead for approx. 10 minutes. Cover and leave to rest for half an hour, then
- Form two loaves and place on a baking tray.
- Then bake the bread at 180°C for approx. 20 minutes, then reduce to 160°C.
- turn down the heat and bake for another 20-30 minutes.
- Remove from the oven, turn the bread over and leave to cool.
As soon as it has cooled, spread with butter and top with fresh watercress.
